(Nut free, dairy free, soy free, gluten free)
1/2 head cauliflower chopped
1/2 vidalia onion diced
1 carrot diced
1 small potato peeled and diced
2 tsp of minced garlic
1 tsp dijon mustard
1cup of plain, unsweetened plant milk (I prefer oat milk)
1 cup of vegetable broth
Saute all veggies in a few tablespoons of vegetable broth until softened. Add the rest of your vegetable broth and let simmer about 15-20 minutes. In the meantime bring a pot of heavily salted water to a boil and prepare your pasta of choice. During the last few minutes add chopped broccoli and drain when pasta is ready.
To a blender or food processor add your vegetables, garlic, dijon and process until smooth. Slowly add in plant milk until creamy. Return to pot and simmer 10 minutes adding salt n pepper as needed.
Combine sauce with pasta and broccoli, add red pepper flakes if you prefer, and enjoy!
